Yue Guang Bai Te Zi

Yue Guang Bai, also known as "Moon White Tea", is a unique variety of white tea that is produced in Yunnan Province, China. This tea got its name due to its appearance and production process, which includes drying under moonlight. It was developed in the early 2000s and quickly gained popularity due to its exceptional taste qualities.

The production process
  
Yue Guang Bai leaves are harvested by hand in early March, usually in the morning. For production, young shoots and leaves of the Da Ye variety (large leaves) are used, which are also used for making puer. After harvesting, the leaves are treated with minimal processing by fast drying and air drying. The drying process may vary depending on the weather, but it usually takes less time than traditional Fujian white tea.

Appearance and fragrance

The leaves of Yue Guang Bai have a characteristic light color with silver and dark sides, which symbolizes moonlight and the night sky. The infusion has a transparent golden hue and an exquisite aroma with notes of flowers, fruits and light herbal accents.

Taste and properties
 
The taste of this tea is mild and sweet, with floral and fruity notes such as apricots and honey. It has a pleasant texture and a light aftertaste. Tea has a low bitterness, but when brewed for too long, it may show some astringency. High-quality samples leave a pleasant aftertaste (hui gan), and can also age well over time.

The brewing process
 
For brewing Yue Guang Bai, it is recommended to use water with a temperature of about 90 ° C. 6-8 grams of tea is enough for one serving (150 ml). The first brew should be infused for 3-5 minutes, and the subsequent ones can be increased by 30 seconds for each new brew. This tea can be brewed several times, revealing new flavors with each serving.
